Almond, cinnamon and banana porridge with a blueberry compote

Fall is upon us, and it’s a great time to cozy up with some warm comfort food. But why not make it delicious, healthy comfort food? It is possible, and Naturally Sassy, young dancer-nutritionist-chef Saskia Gregson-Williams, is here to help! Her flavorful Almond Cinnamon and Banana Porridge with Blueberry Compote is perfect any time of the day – morning, post-class or as a late night nutritious snack!
350ml (1½cups) almond milk
50g (½cup) (gluten-free)
¼teaspoon ground cinnamon (optional)
1 tablespoon almond butter
60g (½cup) blueberries
1 tablespoon water
1 teaspoon fresh lemon juice
This porridge combines some classic flavors: the gentle spiciness of the cinnamon; the nuttiness of the almond milk; and the intense burst of sweetness from the banana and blueberries. Wonderfully rich and completely moreish, this is an everyday staple in my household!
Pour the almond milk into a pan set over a medium high heat. When it starts to bubble, add the oats and lower the heat to a simmer. Peel and mash the banana and add to the pan if you want it to melt into the porridge; if not, stir it into the porridge when it’s cooked. Add the cinnamon, if using, and simmer for 5–10 minutes, stirring frequently.
Just before the porridge is ready, make the compote. Pop the blueberries, water and lemon juice into a small pan set over a high heat. Get the blueberries bubbling away before gently pushing them down and bursting them with your wooden spoon.When it becomes a smooth compote with a few whole plump blueberries remaining, remove from the heat.
Once the porridge is cooked through, stir in the almond butter and pour into your bowl, spoon over the compote and enjoy!
SWITCH IT UP
Blueberries make a delicious compote and go so well with the banana and cinnamon, but you can also use raspberries, strawberries or blackberries instead.
You can make the blueberry compote just after you’ve poured out the porridge, using the same pan to save on washing-up.
